Sweet & salty chicken wings


Chicken wings are one of my all-time favourite pub foods. I mean, mmm! So good. And I often go for the stickiest, sweetest ones on the menu. Honey garlic and teriyaki are some of my favourites, and this recipe is a combination of those two sauces.  

These chicken wings are sweet and salty with an Asian flavour theme. There's garlic in there, soy sauce, honey, plus a few other ingredients that make for an awesome wing sauce. Half the sauce is used as a marinade and the other half gets reduced in a saucepan and tossed with the crispy wings when they come out of the oven. That's mega chicken wing goodness!


Here's how I made them:

1 tbsp garlic, minced
3/4 cup soy sauce
1/2 cup brown sugar
3/4 cup water
1/2 tsp ground ginger
3 lbs (approximately 3 dozen) chicken wings
1/4 cup liquid honey
1 green onion, chopped, for garnish

I stirred together the first five ingredients in a medium mixing bowl. Just over half of the sauce was poured over the raw chicken wings in a large baking dish, and the remaining sauce was covered and set aside in the fridge. The marinating wings were covered and set in the fridge for 4 hours (feel free to marinate these overnight for extra yumminess!).

To cook, I set my oven to 375 degrees (F) and transferred the chicken wings to two parchment lined baking sheets, discarding the marinade. They baked for 45 minutes, turning once half-way through the cooking time. Meantime, I poured the reserved sauce into a small saucepan and added the honey. The sauce bubbled over medium-high heat, while stirring constantly, for 15 minutes before being pouring into a large heat-proof bowl. When the crispy and golden wings came out of the oven, I tossed them in the sauce and plated them with a sprinkling of green onion on top.


These were so good! I think I'll be making chicken wings again soon.

Kate and I get asked a lot about the kinds of go-to foods we have at home when we need quick and easy meals.  In my house we have plenty of frozen pizzas, burritos, and chicken nuggets in the freezer, but when I actually want a quick home-cooked meal, I have to say I probably grab eggs most often.  When I lived in Brazil, I got used to eating eggs in creative ways.  People often fried them up and served them over black beans and rice, in a salad, or as a topping for pizza.  To this day, a hot fried egg over beans is one of my favorite comfort foods.  At my house I often whip up scrambled egg burritos or quesadillas, pile eggs on english muffins with hot ham or pastrami and cheese, or make omelets or frittatas.  Most egg dishes lend well to using up scraps of random veggies you have in your fridge, which make them a great last-minute I’m-totally-out-of-food meal.  Just last night when my little brother was visiting (and was rather shocked to find his food-blogger-sister’s cupboards quite bare)  he rummaged through the fridge and whipped up an awesome scramble with bacon, roasted red peppers, and peperoncinis.  So quick and so great.
This recipe was inspired by Eggs Florentine, which is a super amazing and slightly naughty dish of poached eggs on english muffins with spinach and hollandaise sauce.  This version is lightened up and made to be quick and easy.  It’s totally something I think of as momma-lunch.  When, as a stay at home Mom you find a magical moment when you realize you have a few moments of peace and can actually prepare something wholesome and filling for yourself as opposed to eating the rest of the dino-nuggets left on the kids plates and snacking on chocolate bars (please tell me I’m not the only one who does that.) My husband is usually home for lunch, so sometimes while the kids are chowing down on PB&J’s I’ll make something like this for us (which is why the recipe is written for 2).  It makes a great breakfast, brunch, lunch, or dinner.  You’ll just need eggs, a couple of slices of bread, a tomato, some spinach, mushrooms, and a tiny bit of cream cheese.

Slice the mushrooms and give the spinach a rough chop.

Toss the mushrooms in a hot skillet with a little drizzle of olive oil to start browning.  While those are cooking, you’ll mix up your creamy sauce.  Remember a few weeks ago when I posted this yummy Zucchini Ribbon Pasta dish?  I explained in that recipe that while I don’t often use fat free cream cheese in cooking, it does tend to work great in sauces.  That recipe only uses part of a package of cream cheese and when that happens I always try to come up with recipes that can use the rest so you can plan accordingly.  This won’t use all of the rest, but it uses a little!  You can use regular, low-fat, or even fat free here. Since this recipe is written for 2, we just need an ounce of the cream cheese and we’ll thin it out to a creamy sauce using some nonfat milk and add spices for flavor.  Make sure to microwave and whisk the cream cheese well to get all of those lumps out.

When the mushrooms have cooked for a few minutes and are browned up, toss in the spinach.

It literally takes about 8 seconds for it to wilt.

Then add the creamy mixture to the veggies and stir to heat it though.

Since I like to avoid getting all of my pans dirty, especially on a quick dish like this, I scrape all of the creamy sauce into a bowl and cover it, give the pan a quick rinse, and then put it back on the stove to cook up my eggs.  You can fry your eggs or poach them, whichever you prefer.

While they’re cooking, slice up a ripe tomato.

And toast a couple slices of bread.  Whole grain is extra healthy, but if I’m being honest, hot buttered sourdough would be my first pick!

Layer a couple tomato slices on the bread, top with the spinach sauce, and then an egg.  If your sauce has thickened from sitting, just whisk in a little extra milk. Completely optional (I happened to have some in my fridge this time around) is a sprinkle of feta cheese and some chopped parsley.

I eat it with a knife and fork.  The toasted bread sort of sops up the creamy sauce and the egg yolk and the juices from the tomato.  You get a lot of flavors and textures and one serving is super filling.  Momma lunch at its best!

Eggs on Toast with Creamy Spinach Sauce

Recipe by Our Best Bites

 Ingredients

½ teaspoon extra virgin olive oil (plus cooking spray as needed)
1 cup sliced brown mushrooms
2 cups loosely packed spinach, chopped
1 ounce low fat or fat free cream cheese
2-4 tablespoon skim milk
1/8 teaspoon garlic powder
⅛ teaspoon onion powder
1/8 teaspoon dried oregano
1/8 teaspoon kosher salt (more as needed)
2-3 cracks cracks pepper (more as needed)
2 eggs
2 slices whole grain bread
1 tomato, sliced
optional: 2 tablespoons low-fat crumbled Feta Cheese, parsley

Instructions

Heat a medium skillet to medium-high heat.  Add olive oil and mushrooms and cook 3-5 minutes, until golden brown.  If needed, add cooking spray during cooking process.  While mushrooms are cooking, place cream cheese in a small, microwave-safe bowl.  Warm in 20 second intervals until melted and can be stirred smooth.  Add, garlic, onion, oregano, salt and pepper.  Add milk a little at a time and whisk until smooth, heating more if necessary until you have a nice sauce consistency.
When mushrooms are done, add chopped spinach to pan with mushrooms and stir just until wilted; it should just take a few seconds.  Add cream cheese mixture and stir until combined and heated through.  Remove mixture from pan and keep covered in a bowl.  Wipe pan clean and heat to medium-high heat.  Spray pan with cooking spray and crack 2 eggs into pan.  Sprinkle eggs with salt and pepper and cook until desired doneness.  (You can cook your eggs sunny-side up, or over easy, or poach them.)
Toast bread in toaster and top each with a couple of tomato slices (if desired, you can quickly warm tomatoes in hot pan).  Spoon spinach mixture over each serving and top with egg.  Sprinkle with feta and parsley if desired.  Serves 2.

Slow cooker beef curry
Use your slow cooker for this simple beef curry - it’s full of flavour and guarantees meltingly tender beef. Serve with rice and naan bread.

Ingredients

Preparation method

  1. Heat half of the oil in a frying pan and fry the beef pieces for 4-5 minutes, or until browned all over. (You may need to brown the meat in batches.) Tip the browned meat into the slow cooker.
  2. Heat the remaining oil in a frying pan and fry the onions for five minutes, then add the garlic, chilli and ginger and fry for another 2-3 minutes. Add the spices and fry for another minute, then tip the mixture into the slow cooker.
  3. Add the chopped tomatoes to the slow cooker, then fill one of the empty casn with water and add the water to the slow cooker.
  4. Stir everything together, pressing down so that everything is covered in liquid and cook for 8-10 hours on low.
  5. About 30 minutes before serving, stir in the garam masala and yoghurt and season to taste with salt and a little more chilli. Cook for a further 30 minutes, then stir in the coriander.

    4 large egg yolks

Make sure all the liquid is evaporated other wise you are going to have a mess trying to form the rice balls if the rice is too liquid.

Taiwanese Three Cup Chicken

Taiwanese Three Cup Chicken


This dish is called three cups because it is traditionally made with equal proportions of three main ingredients: soy sauce, sesame oil and rice wine.  It is a one pot dish that is flavourful and very easy to make.  Although the authentic version has thai basil in it, I have also made this dish without it and it still tastes great.
Three Cup Chicken Recipe
6 to 8 chicken drumsticks (Note: You could also any chicken parts that you like: wings, half or whole chicken cut into chunks, or the most popular – boneless skinless chicken breast or thighs cut into pieces.)
1/3 cup toasted sesame oil
1/3 cup shaoxing wine
1/6 cup soy sauce
1/6 cup dark soy sauce (or substitute with soy sauce)
1/4 cup water (Note: Omit this if using boneless chicken meat)
3 tablespoons Chinese rock sugar, chopped roughly (or substitute with white granulated sugar) – Note: Be careful handling the rock sugar as it can have sharp edges when cut
6 cloves garlic, roughly minced
3 slices of ginger cut into thin strips
1 to 2 small red chillies (or to taste), deseeded and sliced thinly (optional)
1 cup very loosely packed fresh thai basil (or substitute with green onions, green parts only cut into 2 inch pieces)
Heat a heavy bottomed pot or a large clay pot over medium high heat.  Add the sesame oil.  When the oil is hot, add the ginger, garlic, and red chillies if using, and saute for 30 seconds to 1 minute.  Then add the chicken drumsticks and the shaoxing wine, soy sauce, dark soy sauce, rock sugar, and water (omit water if using boneless chicken).  Cover the pot with a lid and bring the sauce to a boil.  Lower the heat to maintain a simmer while uncovered.  (If using boneless chicken, simmer covered.)  Mixing the chicken occasionally (to make sure that all of the pieces are covered in sauce and cooked evenly), cook for 15 to 25 minutes until the chicken drumsticks are just cooked through. (If using boneless chicken meat, cook for about 6 to 8 minutes.) About 3 to 5 minutes before the end of your cook time, add the thai basil and stir to combine.  Do not overcook the chicken.  Remove the pot from heat and serve hot with rice.

QPC Roast Chicken

Ingredient:
1 chicken aprrox. 1.5 kg
1 bulb garlic minced
1 medium onion, finely chopped
olive oil, enough to oil the whole chicken

Mix all the following to prepare the rub.
1 tsp sea salt
1 tsp freshly ground black pepper
1 lemon
1 tsp chopped thyme,
1 tsp chopped rosemary
1 tsp sage

Method:

Preheat oven at 200 degree C or 400 degrees F.  Take your chicken out of the fridge 30 minutes before it goes into the oven. Rub minced garlic and finely chopped underneath the skin. Next rub the mixture of spices underneath skin and on the skin. Drizzle the chicken with olive oil, rubbing it all over the chicken.Prick the lemon all over, using the tip of a sharp knife and pop into the microwave for about 30 secs to bring out its flavor. Put the lemon inside the chicken’s cavity and truss the chicken. Place the chicken  in the roasting tray and put it into the preheated oven. Roast for 1 hour and 15 minutes or until internal temperature of thickest part of the chicken is 74 degrees C or 165 degrees F. Baste the chicken halfway through cooking. When cooked, take the tray out of the oven and transfer the chicken to a board to rest for 15 minutes. Cover it with a layer of tinfoil and a tea towel and put aside before carving the chicken. 

Serve the chicken either with your favorite gravy or roasted vegetables. That is entirely up to you.

I served it with butter garlic spinach and braised carrots, potatoes and swede. My Quay Lo suggested that I place the roast chicken breast on top of the swede so that the skin will stay crispy. Good point!

Dr. Oz Shepherd's Pie

Ingredients

Serves 2

10 cups cauliflower florets, steamed soft
1 tsp salt
2 tbsp unrefined virgin coconut oil, divided (more or less if needed)
2 cups roughly chopped broccoli florets
1 small bok choy, roughly chopped (about 2 cups)
8 oz poached chicken, diced
Freshly ground pepper

Directions

Preheat the oven to 400°F degrees. Purée the cauliflower, 1/2 teaspoon of salt and 1 tablespoon of the coconut oil in a blender until very smooth. set aside. In a medium pan sauté the broccoli for 2 minutes in 2 teaspoons of coconut oil, until lightly browned and starting to soften a bit. Transfer to a bowl and cook the bok choy for 2 minutes, in the same pan, adding a little more of the coconut oil if necessary, until starting to brown. Transfer bok choy to the bowl with the broccoli. Add the diced chicken, 2 cups of cauliflower purée, 1/2 teaspoon salt and freshly ground pepper and gently toss. Transfer mixture to a 4 cup baking dish, top with the remaining cauliflower purée and bake for 20 minutes until hot and bubble. If you like to brown the top a bit, broil for a few minutes after baking.
